Ingredients:
1 lb ground turkey
brown rice cakes or breadcrumbs
1 egg
feta cheese (use vegan or regular)
white onion, finely chopped
Handful of chopped cilantro
Handful of chopped parsley
salt
black pepper
garlic powder
onion powder
all-purpose seasoning
1 tsp Worcestershire sauce
Dash of salt-free table blend (optional)
Olive oil (for cooking)
½ to 1 jar of pasta sauce

Instructions:
Prep the Meat Mixture – In a large mixing bowl, add the ground turkey and gently break it apart. Add in your chopped onion, feta, cilantro, parsley, and egg. Mix in the crumbled rice cakes or bread crumbs along with all the seasonings and Worcestershire sauce. Combine everything well, being careful not to overwork the mixture.
Shape the Meatballs – Using a spoon and slightly wet or oiled hands, form the mixture into evenly-sized meatballs. Place each one on a lined baking tray or a clean cutting board, spacing them about 1–2 inches apart.
Chill (Optional but Recommended) – Pop the tray into the fridge for about 30 minutes. This helps the meatballs firm up and hold their shape during cooking.
Sear & Simmer – Heat 2–3 tablespoons of olive oil in a skillet over medium-high heat. Sear the meatballs on all sides until nicely browned (about 3–5 minutes). Pour in half the pasta sauce if using, letting it simmer around the meatballs.
Bake to Finish – Transfer the skillet to a preheated oven at 350°F (or move meatballs to an oven-safe dish). Bake for 10–20 minutes, depending on the size of your meatballs, until fully cooked through.
Serve & Enjoy – Once out of the oven, drizzle with remaining pasta sauce (if using) and garnish with extra parsley. Serve warm with your favorite side — think pasta, rice, roasted veggies, or warm bread.
