Mix the Seasonings – In a small bowl, combine salt, pepper, and all-purpose seasoning.
Prepare the Salmon – Pat the cleaned salmon fillets dry with a paper towel to remove excess moisture.
Season the Salmon – Lightly coat the salmon with olive oil, then evenly sprinkle the seasoning mixture on both sides.
Heat the Skillet – Add olive oil to a hot cast iron or stainless steel skillet. The oil should be hot enough that it thins out and moves easily when swirled.
Sear the Salmon – Place the salmon fillet skin-side down first. Let it cook undisturbed for 3-5 minutes, depending on your desired doneness. Flip and cook for another 3-5 minutes on the other side.
Add Butter & Herbs – Once flipped, add fresh thyme and butter to the skillet. Allow the butter to melt completely, then tilt the skillet and baste the salmon by spooning the butter over the fillets.
Finish with Lemon – Remove the salmon from the skillet and squeeze fresh lemon juice over the top for added brightness.
Rest & Serve – Let the salmon rest for 3 minutes, then serve. For extra flavor, drizzle some of the buttery pan sauce over the salmon before serving.
