Ingredients:
  • 1 lb boneless, skinless chicken thighs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium red onion
  • 2 zucchini
  • 2 garlic cloves, minced or chopped
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 1 tbsp salt-free Tabitha Brown garlic, ginger, mango blend (or your favorite seasoning)

Instructions:
  • Mix the Marinade – In a small bowl, whisk together olive oil, soy sauce, sesame oil, honey, minced garlic, and seasoning blend to create a flavorful sauce.
  • Prep the Vegetables – Chop bell peppers, onion, and zucchini into evenly sized squares for easy stacking.
  • Prepare the Chicken – Pat the chicken dry, cut it into bite-sized cubes, and coat it in the marinade. Let it sit for 30 minutes to 1 hour to soak up the flavors.
  • Assemble the Skewers – Alternate stacking chicken and vegetables onto skewers for an even mix of colors and flavors.
  • Preheat & Prep the Pan – Preheat the oven to 420°F (215°C) and line a baking sheet with aluminum foil for easy cleanup.
  • Roast the Kabobs – Place skewers on the prepared baking sheet and roast for 30-45 minutes, flipping halfway through for even cooking.Glaze & Serve – Once done, brush kabobs with extra soy-honey sauce for a glossy finish. Serve hot with rice, a fresh salad, or enjoy them on their own!

TIPS:
