Ingredients:

  • 1 whole branzino
  • 1 small shallot, sliced
  • 1 lemon, sliced
  • 2 garlic cloves, chopped
  • 2 tbsp butter (vegan or dairy)
  • 1 scallion, chopped
  • 3 tbsp EVOO
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions:

  • Mix the Seasonings – In a small bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, paprika, and all-purpose seasoning to form a paste.
  • Prepare the Fish – To clean fish, using a sharp knife, cut three small slits on both sides of the branzino to ensure even cooking.
  • Season the Branzino – Rub the seasoning paste generously on the outside and inside of the fish.
  • Stuff the Fish – Add lemon slices, shallots, and fresh thyme inside of fish for added flavor.
  • Preheat & Prep the Pan – Preheat the oven to 420°F (215°C) and line a non-stick baking pan with parchment paper.
  • Roast the Branzino – Place the fish on the prepared pan and roast for 30 minutes, flipping halfway through.
  • Make the Garlic Butter Sauce – In a small bowl, combine chopped garlic, scallion, and butter, then microwave or heat on the stove until melted.
  • Finish & Serve – Once the fish is done, drizzle the garlic butter sauce over the top. Serve with your favorite side dish like roasted vegetables, rice, or a fresh salad.
